What’s better than comfort food? Healthy comfort food! ??? not the most photogenic but sooooo good. This reminds me of my old housemate Em who used to make something similar with a lot of garlic and herb Philadelphia! This meal is the perfect quick and easy winter warmer to keep you going through lunch until dinner time ?☃

Garlic Mushrooms on Toast

I call this cream my garlic mushrooms on toast and it's perfects before days like today spent wrapped in a blanket applying for jobs!

Ingredients

  • A handful of mushrooms
  • A wedge of courgette or handful of spinach not essential just a nice extra
  • 1-2 cloves of garlic
  • 1/4 of a vegetable stock cube
  • A splash of water
  • 2 tbsp low fat creme fraiche
  • A sprinkle of Parmesan

Instructions

  • Lightly soften the garlic, then throw everything else in and simmer until the veg has softened and sauce is creamy. Pop into a piece of toast and sprinkle with Parmesan!

 The perfect meal for days like today spent on the sofa wrapped in a blanket applying for jobs!

Raspberry, Blueberry and Banana Breakfast Smoothie Pancakes!

I kind of made these up with things I had milling about the fridge this morning, and they worked out so so well! They’re a lot lighter than normal American pancakes, which I can’t usually eat because they make me feel terrible! But these bad boys are something else!

Blueberry, raspberry and banana smoothie pancakes for brunch this morning! Not very photogenic because they're much gooier than normal American ones... No way near as heavy too!!

Ingredients

  • 1 very ripe banana
  • 230 g of mixed raspberries and blueberries
  • 100 ml almond milk
  • 200 g flour
  • 1 egg
  • 1 tsp baking powder
  • Coconut oil

Instructions

  • Whiz it all ingredients and half the berries together in a blender (I used my NutriBullet). Melt some coconut oil in a non stick pan and pour out enough to make one pancake. Decorate with a few berries on top while cooking. Cook until solid (this takes quite a while, I prefer mine still quite gooey in the middle) and serve!
