Garlic Mushrooms on Toast

I call this cream my garlic mushrooms on toast and it's perfects before days like today spent wrapped in a blanket applying for jobs!

  • A handful of mushrooms
  • A wedge of courgette or handful of spinach not essential just a nice extra
  • 1-2 cloves of garlic
  • 1/4 of a vegetable stock cube
  • A splash of water
  • 2 tbsp low fat creme fraiche
  • A sprinkle of Parmesan


  • Lightly soften the garlic, then throw everything else in and simmer until the veg has softened and sauce is creamy. Pop into a piece of toast and sprinkle with Parmesan!
